Story
Ah! International Champagne brands; the glamour, the prestige, the fortunes spent on marketing... They may be well-known, but do they deliver? As a contrast, Champagne lovers are increasingly discovering 'Grower-Champagnes'$$ i.e. wines from relatively unknown producers which are really special.
François Moutard and his sisters (with four centuries of family tradition behind them) are fervent defenders of the family heritage (to the point of resurrecting forgotten grape varieties), and they store and blend Champagnes from several years to create their signature multi-layered flavours. This results in a delicate balance between maturity & mineral structure - i.e., the things that make it taste exciting. The 'Persin' is all-Chardonnay (therefore blanc de blancs) from a single vineyard, and is a rare and highly awarded Champagne.
Taste
The Côte des Bar receives more sun than is typical for the Champagne region, which makes for a superb citrusy wine with honeydew aromas and a hint of tea-leaves, pressed white fruits and nutty green hazelnuts.
Serve
Lightly chilled at 11°, and wonder (now that you’re cool) why you used to go for those well-known brands.
Match
Apéritif with salmon toasts, caviar or salmon eggs, hot oysters cooked with Champagne, prawns with saffron, poached fish with hollandaise sauce, risotto with Alba truffles, Chaource cheese….
Avoid
Opening a third bottle – you should save some for tomorrow. And it’s just greedy.
