Story
You couldn’t make up this story. A Wiltshire farmer and an Auzzie ballet dancer decide to make wine. But not just any wine –this is biodynamic, hillside wine from the heart of Cathar country.
The name Les Clos Perdus (Hidden Vineyards) reflects Paul Old and Hugo Stewart's desire to discover small parcels of old vines scattered throughout the hillsides. Many had been disregarded because of their isolation, their low yields, and their inability to be machine worked. But these are precisely the qualities that make them attractive to us, which explains Prioundo’s inclusion on wine-lists from Gordon Ramsay’s Claridges to Club Gascon.
Taste
Made from 20-year-old Grenache, the vines are on a hill top, surrounded by garrigue (juniper and wild herbs) - an ideal spot for organic production and wild boar! Here the clay soil drains well due to an abundance of stone.
Serve
Slightly cool at 16°, leave at least 30 minutes to “open up”.
Match
Lentil or bean soups, roasted firm fleshed game-fish, succulent steaks and barbequed vegetables including peppers.
Avoid
Trying to find ‘hidden vineyards’. They’re hidden. Very Well Hidden.
