Story
Winemaker Hervé Bizeul, who won Best Sommelier of France, knows how to make spectacular, food-friendly wines. This is his un-oaked blend of Carignan and Grenache from 80-year-old vines with a touch of younger Syrah.
Taste
Rated highly by wine guides and critics from Paris to New York, this is a fantastic food wine. Classic Roussillon flavours of intense blackcurrant and bilberry, with hints of the garrigue in which it is grown (juniper, wild thyme, sage, rosemary).
Serve
Slightly cool at 16°, and leave 30 minutes to “open up”.
Match
Robust hearty casseroles and more rugged meat dishes, especially when using garrigue herbs. Excellent with tomato flavours, turkey with cranberry, and especially game - Sanglier (wild boar) is the favourite in Roussillon!
Avoid
Trying to fly on a broomstick after a glass or two ... it’ll only end in bruises (or tears).
