Story
Wine lovers have long appreciated the joy to be had in white Burgundy. Whilst we agree, we really appreciate the joy of white Burgundy without having to decipher the 27 communes of Chablis.
The key lies with two of our favourite winemakers, ex-M&S buyer and technologist Sam Harrop MW and ex-Penfolds John Worontschak. They’ve worked with Domaine St Hilaire since 2004, where low rainfall, an abundance of coastal sunshine, and cool night temperatures deliver a perfect climate for the creation of exquisite wine.
Taste
Filature’s supple texture and depth pays testament to fastidious selection of the best grapes from low yielding old vines. The wine is hand crafted using natural winemaking techniques. The result is bright citrus and white flowers on the nose framed by spicy wood. The unctuous soft texture is enhanced by minerality whilst the rounded honeyed palate is gently tropical.
Serve
Chilled at 11°.
Match
Game birds, roasted fish accompanied with provençale peppers, or classic lobster in mandarin noodles and Asian greens.
Avoid
Giggling when you hear “I’d like Anything But Chardonnay – I prefer a Chablis instead.”. It’s not polite.

Equally good as the apéritif as with the meal; and with more southern sunshine in the glass than you’d find in Burgundy…. who are these guys?
