Frederic Grappe
Having trained with Philippe Faure-Brac (Best Sommelier in the World 1992) in Paris, Frederic moved to London in 1996 where he opened Quo Vadis with Marco Pierre White and managed 1600 wines, which was the largest New World wine-list in Europe at the time. In 1999 he opened Roussillon and was its Head Sommelier & Restaurant Manager, and later moved to Michelin-starred Orrery, and now runs his own specialist biodynamic wine company.
He says, “a great food-wine is one that has structure. Its fruit, minerality and taste must be balanced with fresh acidity to accompany the meal rather than to take over the meal. Elegance, rather than power, is the key.”
